Italian Chicken Pasta Salad

This Italian Chicken Pasta Salad is a delicious high protein pasta recipe that also happens to be full of veggies and bursting with flavor.

  • 8 oz pasta of choice
  • 8 oz shredded cooked chicken
  • 1/2 cup salami, chopped
  • 1/2 cucumber, diced
  • 1/2 red bell pepper, diced
  • 1/2 cup Kalamata olives, chopped
  • 1/4 cup red onion, finely chopped
  • 1/4 cup feta cheese crumbles
  • 1/4 cup sun-dried tomatoes, chopped


  • Cook the pasta according to package directions. Strain and rinse with cool water.
  • Season the chicken with a pinch of salt and pepper.
  • Make the dressing: Add all ingredients for the balsamic vinaigrette to a jar and shake with the lid on until well combined and smooth, about 15 seconds.
  • Add all ingredients to a bowl and pour with the dressing. Toss to combine and enjoy!
