Instant Pot Tuscan Chicken

This Tuscan chicken recipe is delicious on its own, but it’s also great served on top of a bowl of cauliflower rice or high protein pasta for a more filling meal. You may want to shred the chicken versus slice it if you eat it this way.
Instant Pot Tuscan Chicken Recipe Tips:
+ If you don’t have an Instant Pot, you can make this on the stovetop in a pot with a lid. It will just take a bit more time for the chicken to cook all the way through.
+ If you can’t find sundried tomatoes without oil, just drain the jarred tomatoes well so it doesn’t make your dish overly oily.
Instant Pot Tuscan Chicken
Ingredients
- 1/2 tbsp olive oil
- 1 small sweet onion, diced
- 12 oz marinated artichokes , drained
- 3 oz sun-dried tomatoes, bagged, not in oil
- 1 1/2 lbs boneless, skinless chicken breasts
- 1 tsp garlic powder
- 1 tsp salt
- 1/4 tsp black pepper
- 13 oz coconut milk
- 1 tbsp flour
- 2 cups fresh spinach

- Turn the instant pot on sauté mode and add the oil. Once hot, add the diced onion and sauté for about 3-5 minutes or until fragrant and translucent.
- Add the remaining ingredients except the flour and spinach. Stir to combine.
- Place the lid on the instant pot and cook on high pressure for 15 minutes, with a 10 minute natural release.
- Remove the chicken from the pot and let rest for about 5 minutes.
- Meanwhile, turn the saute mode back on. Whisk in the flour until the sauce has thickened, about 2 minutes. Turn the sauté mode off and stir in the spinach.
- Slice the chicken and add it back into the pot. Stir into the sauce.
- Serve with desired side dish and enjoy!
