  • Set the Instant Pot to the saute mode. Add the beef and saute, breaking up the beef, for about 5 minutes or until mostly browned.
  • Add the corn, black beans, onion, bell pepper, taco seasoning, broth, rice, and enchilada sauce. Stir to combine.
  • Close the lid and set to high pressure for 10 minutes, then slow release for 5 minutes, then quick release the pressure.
  • Serve hot with desired toppings such as cilantro, sliced radish, and jalapeno!
