Chicken Mango Chopped Salad

We love cabbage as the base of this dish because it holds all the ingredients and dressing well without wilting too much. If cabbage isn’t your favorite, you could substitute finely chopped kale or shaved brussels sprouts instead.

Chicken Mango Chopped Salad
Ingredients
Salad
- 2 cups red cabbage, chopped
- 2 cups savoy cabbage, chopped
- 2 persian cucumbers, diced
- 1/2 cup green onion, diced
- 1 red bell pepper, diced
- 1 large mango, diced (or 2 small)
- 1 avocado, diced
- 1/2 cup slivered almonds
- 1 lb chicken, cooked and finely diced
Salad Dressing
- 1/4 cup olive oil
- 2 tbsp fresh lime juice
- 1 tbsp rice vinegar
- 1/2 tbsp honey
- salt and pepper to taste
Instructions
- Combine all salad ingredients in a large bowl.
- In a separate bowl, whisk together all the salad dressing ingredients.
- Pour the dressing over the salad and toss until completely combined. Let chill in the fridge for 30minutes before serving and enjoy!
