Mexican Street Corn Dip
Mexican Street Corn Dip is such a flavorful side dish that pairs well with grilled meat, tacos, or even just as a delicious pool side snack. We made a lightened up version that features Greek yogurt, fresh lime juice, red onion, and fresh cilantro. It’s so tasty with tortilla chips or even just eaten with a spoon!

Cojita cheese is a salty Mexican cheese that can be found in most grocery stores. If you can’t find it or want to substitute it with something else you may have on hand, try Parmesan cheese.
Mexican Street Corn Dip Recipe Tips:
+ If you don’t have chipotle powder, you can used smoked paprika instead and throw in a dash of cayenne pepper to add the heat.
+ This is an easy recipe to make ahead of time. Just keep it chilled in an airtight dish until you’re ready to serve it.
Mexican Street Corn Dip
Ingredients
- 1/2 cup plain Greek yogurt, unsweetened
- 2 tbsp low-fat cream cheese
- 1 tbsp light mayonnaise
- 1/2 tsp chipotle powder
- 1/2 tsp chili powder
- 1 lime, juiced
- 3 cups sweet corn, fresh or frozen
- 1/4 cup fresh cilantro, chopped
- 1/3 cup red onion, finely diced
- 1/3 cup cotija cheese
To Serve
Instructions
- In a large mixing bowl combine the Greek yogurt, cream cheese, mayo, chipotle powder, chili powder, paprika, lime juice, and a pinch of salt and pepper. Mix until combined.
- Fold in the sweet corn, cilantro, red onion, and cotija. Garnish with more cilantro and lime wedges if desired. Serve alongside your favorite tortilla chips and enjoy!
