In a quick five minutes, you can easily whip together healthy avocado toast recipe. It’s hearty and versatile, so you can keep it as simple as you like, or beef it up with some of your favorite breakfast ingredients.

All we used to make this dish is fresh, ripe avocado, a little salt, pepper and olive oil then a few slices of tomato. You can add boiled egg, onion, smoked salmon, or red onion if you’re feeling fancy, or fried eggs and bacon if you desire something a bit more filling.

The lemon juice will prevent the avocado spread from browning, especially if you make it in advance; it will also add a nice, subtle pop of citrus pizzazz. If you like a hint of spice, bust out the red pepper flakes!

Instructions
 

  • Cut avocado in half and remove pit. Scoop flesh from avocado skins and place in a bowl. Mash avocado with a fork then season to taste with salt and pepper. Stir in lemon juice. Spread desired amount of mashed avocado over toast and drizzle with olive oil.
  • Top with sliced tomato seasoned with salt and pepper and enjoy!
