One of the best parts of these breakfast quesadillas is that you can wrap them up and freeze them, making it an incredible meal prep recipe. Then all you have to do is pop them in the microwave for 2 minutes when you’re ready to enjoy, and you have a filling and easy macro friendly breakfast.

Adding cottage cheese to scrambled eggs is one of our favorite tips for increasing the protein in our favorite breakfast dishes. Freezer Friendly Breakfast Quesadillas

These freezer friendly breakfast quesadillas are one of our favorite high-protein breakfast recipes for weight loss.

Ingredients
 

Yield: 4 quesadillas

  • 1/2 lb lean breakfast chicken sausage
  • 8 egg whites
  • 4 tbsp fat free cottage cheese
  • 1 cup low fat cheddar cheese
  • 4 low carb tortillas
  • Pinch of salt and pepper

Instructions
 

  • Whisk the egg whites and cottage cheese in a bowl. Set aside.
  • Cook the chicken sausage in a skillet over medium heat until cooked through. Once cooked, pour the egg white mix into the skillet along with a pinch of salt and pepper, and scramble until cooked through.
  • To assemble the quesadillas, sprinkle ¼ cup of the shredded cheddar on a tortilla, followed by ¼ of the egg mixture. Fold in half and place into the freezer for 1 hour.
  • After each quesadilla has set in the freezer for 1 hour, wrap each quesadilla with parchment paper, then foil, and place in the freezer.
  • When ready to eat, remove from the freezer and remove the foil. Place in the microwave for 1 minute, then flip over, and microwave for another minute. Carefully remove the parchment paper, and enjoy!
