Single Serve Banana Cream Pie

This single serve banana cream pie is a great high protein dessert recipe. It's simple to make, absolutely delicious, and full of protein!

Ingredients

  • 4 vanilla wafers, crushed
  • 1 banana, sliced
  • 3/4 cup plain Greek yogurt
  • 2 tsp monk fruit sweetener
  • 1/2 – 1 scoop vanilla protein powder
  • 2 tsp sugar free banana cream pie flavored pudding mix
  • dollop whipped cream, optional

Instructions
 

  • Crumble about 2/3 of the vanilla wafers into a chunky breadcrumb consistency. Layer in the bottom of a serving bowl.
  • In a bowl, mash 1⁄2 of the sliced banana with the greek yogurt, monkfruit, protein powder, and banana pudding mix. Layer this mixture in the serving glass on top of the vanilla wafers.
  • Top with sliced banana, a dollop of whipped cream if desired, and the rest of the vanilla wafer crumbs! Optional to chill in the fridge or serve immediately.
