Grilled Zucchini Recipe
When it comes to cooking with veggies, simple is usually the best. That’s definitely the case with our grilled zucchini recipe! All you need is four ingredients and about 15 minutes.
You’ll want to cut the zucchini nice and thick—about ½” is perfect—so that it can stay on the grill long enough to get those beautiful grill marks. Thinner pieces of the veggie would otherwise overcook in the process.
Garlic powder is also better for this recipe. Fresh garlic can burn on a hot grill and will just give your zucchini a bitter flavor. Enjoy!
Simple Grilled Zucchini Recipe
This is hands-down the easiest, most delicious grilled zucchini recipe you’ll ever try—we promise!
Ingredients
Yield: 4 servings
- 2 medium zucchini
- 1 Tbsp olive oil
- 1/2 tsp garlic powder
- salt and pepper, to taste
Instructions
- Preheat indoor or outdoor grill to medium heat and lightly oil grates.
- Remove both ends of zucchini and slice on the diagonal into ½" thick planks. Place zucchini in a large mixing bowl and drizzle with olive oil. Toss to coat and sprinkle with garlic powder, salt and pepper.
- Grill about 5–6 minutes per side or until nicely seared and cooked to desired tenderness. Zucchini will continue to soften after removing from grill, so be sure to take them off just before they reach the perfect stage.
Notes
Cutting zucchini diagonally—or on the ‘bias’—is a great way to create larger pieces out of a small veggie!
