Easy Bacon Breakfast Hash

Topped with fried eggs, or wrapped up tight with scrambled eggs in a flour tortilla, this breakfast hash recipe is as diverse as it is tasty. We happened to have bacon in the fridge, but savory sausage or ham serve as fine alternatives to crispy bacon. And we dare say—if you’re trying to get to someone’s heart through his belly, cook those taters in bacon grease!
Peeling the potatoes is optional, or if you’re really short on time, you can always buy potatoes from the freezer section and skip right to adding the meat and veggies to suit your family. Serve immediately and don’t forget your favorite condiments like ketchup, hot sauce or fresh salsa!
Easy Bacon Breakfast Hash Recipe
Ingredients
- 1/2 lb bacon, thick-cut, diced into ½" pieces
- 2 large Russet potatoes, diced into ¼" cubes
- 1/2 tsp salt
- 1/2 tsp paprika
- pepper, to taste
- 2 Tbsp oil
- 1 yellow onion, diced
- 1 red bell pepper, or green bell pepper, seeded and diced
- 2 cloves garlic, minced
- salt and pepper, to taste
Instructions
- Cook bacon over medium heat in a 12" nonstick skillet for about 12 minutes, stirring occasionally, until crisp. Transfer bacon to a paper towel-lined plate using a slotted spoon to drain.
- Remove all but 3 Tbsp of bacon grease from skillet then add potatoes. Return skillet to medium heat then season potatoes with salt, paprika and pepper. Cook, stirring frequently, about 25–30 minutes until brown and crisp.
- Transfer potatoes to plate containing bacon then return skillet to heat. Add 2 Tbsp oil then add diced onion, bell pepper and minced garlic. Cook about 5 minutes, stirring frequently, until onions are translucent and bell peppers are soft.
- Return bacon and potatoes to skillet then stir to combine. Allow all ingredients to reheat and serve nice and hot topped with an egg cooked any style.
