Pasta salad is one of our go to lunch recipes. It’s so easy to prep ahead of time and really only gets better as the week goes. Your noodles absorb the vinaigrette dressing and it just ends up so incredibly flavorful. One of our newest additions to our high protein pasta recipes is this Italian Chicken Pasta Salad. It’s full of protein, veggies, and is bursting with flavor. Plus, it couldn’t be easier to put together. Make a big batch for your next party or meal prep it for a healthy and satisfying lunch.

Italian Chicken Pasta Salad Recipe Tips:
+ This dish is best served chilled. Store it in the fridge until you’re ready to eat.
+ You may want to mix in a tiny drizzle of olive oil if you find any of your noodles sticking together as the week goes on.
+ Use leftover rotisserie chicken to make this recipe even easier!
+ We like to use a high protein noodle like chickpea or edamame pasta in this recipe, but you can use whatever pasta you like best.

Italian Chicken Pasta Salad
Ingredients
- 8 oz pasta of choice
- 8 oz shredded cooked chicken
- 1/2 cup salami, chopped
- 1/2 cucumber, diced
- 1/2 red bell pepper, diced
- 1/2 cup Kalamata olives, chopped
- 1/4 cup red onion, finely chopped
- 1/4 cup feta cheese crumbles
- 1/4 cup sun-dried tomatoes, chopped
Balsamic Vinaigrette
- 1/2 cup olive oil
- 1/4 cup balsamic vinegar
- 1 tbsp Dijon mustard
- 2 tsp Italian seasoning
- 1 tsp garlic powder
- salt and pepper to taste
Instructions
- Cook the pasta according to package directions. Strain and rinse with cool water.
- Season the chicken with a pinch of salt and pepper.
- Make the dressing: Add all ingredients for the balsamic vinaigrette to a jar and shake with the lid on until well combined and smooth, about 15 seconds.
- Add all ingredients to a bowl and pour with the dressing. Toss to combine and enjoy!
