Chicken Tot Pie
Chicken pot pie is one of those ultimate comfort meals that is so hearty, warm, and tasty. We found a way to make it even easier and more scrumptious for week night dinners by using tater tots as the top crust. YUM. This is such a great recipe for meal prep. Our favorite way to store it is in a glass container that can go right into the toaster oven to keep your tater tots crunchy. You can warm it up in the microwave also in a pinch. And if you like spice, try throwing a few dashes of hot sauce on it to really ramp up the flavor of leftovers.

Chicken Tot Pie
Ingredients
- 1/4 cup salted butter
- 1 cup onion, diced
- 1 cup carrot, diced
- 1 cup celery, diced
- 1 tsp garlic powder
- 1/2 tsp dried thyme
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/3 cup all purpose flour
- 2 cups milk
- 1 cup chicken broth
- 1 1/2 lb chicken, cooked and shredded
- 1 1/2 cups peas
- 1/2 bag frozen tater tots

- Preheat the oven to 400 degrees Fahrenheit.
- Heat a large cast iron skillet over medium heat and add the butter. When the butter is melted, add the onion, carrot, and celery. Sauté until mostly tender, about 8 minutes.
- Stir in the garlic powder, thyme, salt and pepper. Cook, stirring often, then add the flour and cook stirring often for about 2-3 minutes.
- Slowly stir in the milk, then the broth. Bring to a simmer, stirring occasionally, for about 5 minutes, until thickened.
- Stir in the chicken and peas. Simmer for another couple of minutes, then remove from the heat. Top with enough tater tots to cover the top of the filling.
- Transfer to the oven and bake for 30-40 mins or until the tater tots are golden brown and the edges are bubbling.
