  • Turn the Instant Pot onto saute mode and add the ghee. Once melted, add the onion and saute for about 2-3 minutes. Add the garlic and ginger and saute for another minute.
  • Add the spices and saute for about 30 seconds. Deglaze the pot with the tomato sauce and stir.
  • Add the water and chicken thighs to the pot and stir. Place the lid on and set the Instant Pot to Pressure Cook for 8 minutes on high pressure. It will take about 10 minutes or so for the Instant Pot to come to pressure. When the program ends, quick release the pressure.
  • Remove the lid and stir in the coconut milk. Place the Instant Pot onto the saute mode and let the mixture reduce and thicken for about 3-5 minutes. Turn the Instant Pot off and let cool for about 10 minutes before serving. Taste and add more salt if desired.
  • Garnish with fresh cilantro and enjoy!
