One Pan Queso Chicken
We love easy one pan recipes where you can dump all the ingredients into a dish and throw it into the oven. This one pan queso chicken is not only incredibly simple to make, it’s also a delicious high protein chicken recipe for weight loss. It has all the flavors of your favorite queso dip, but with a big helping of chicken to keep you full and fueled.

If you want to add some volume to this dish, you can serve it up with some rice (our Cilantro Lime Rice is SO good with this). Or you could enjoy it with some cauliflower rice if you are watching your carb intake. If you want to keep things simple though, just throw it in a bowl and eat it on its own. It’s so flavorful and the beans and corn make it feel more interesting than just eating chicken in a delicious sauce.
One Pan Queso Chicken Recipe Tips:
+ Make sure you slice your chicken breasts or they will take MUCH longer to cook until they reach 165 degrees Fahrenheit. This can make your sauce start to burn around the edges… and probably result in hangry family members. Use a food thermometer to check when your chicken is done. It’s hard to tell by sight alone when the chicken is in the queso sauce.
+ You want to make sure you let your cream cheese soften before mixing it all together. It makes it MUCH easier to work with.
One Pan Queso Chicken
Ingredients
- 2 large chicken breasts, sliced lengthwise
- 13 oz can fire roasted diced tomatoes
- 13 oz can black beans, drained and rinsed
- 13 oz can sweet corn, drained and rinsed
- 4 oz can green chilis
- 1 packet taco seasoning
- 8 oz cream cheese, softened
- 8 oz shredded Mexican cheese
- salt and pepper
- green onion, to serve
- cilantro, to serve
Instructions
- Preheat the oven to 400 degrees Fahrenheit.
- In a large bowl, mix together the tomatoes, black beans, corn, green chilis, taco seasoning, cream cheese, and ¾ cup of the shredded cheese
- Once combined, pour into a 9×13” casserole dish.
- Place the 4 pieces of chicken on top and sprinkle with salt and pepper.
- Cover and bake for 45 minutes or until the chicken is cooked through. Remove from the ovenand remove the chicken. Stir the loaded queso until completely combined.
- Place the chicken back into the pan and top with the remaining ¾ cup of shredded cheese. Bake for an additional 15 minutes.
- Let cool about 10 minutes before serving. Garnish with green onion and cilantro if desired and enjoy!
