Pink Grapefruit Granita
Our pink grapefruit granita recipe is everything you want out of a refreshing summer cocktail—and more! We combined ruby red grapefruit with whipped cream vodka to create the perfect marriage of sweet and tart. We’re in love with the unique flavor!
There’s nothing to this recipe—simply combine the ingredients and make sure the sugar dissolves completely. We boiled the water and sugar in the test kitchen to ensure the mixture combined without a hitch, but you can just as easily nuke the sugar and water for a minute or two.
Place the mixture in the freezer overnight then scrape the contents into serving glasses when you’re ready to serve! We garnished our pink grapefruit granita with a spring of mint for a pop of color but it’s certainly not necessary—we’re just all about the presentation!
Pink Grapefruit Granita Recipe
Ingredients
- 1 1/2 cups water
- 3/4 cup sugar
- 1 cup grapefruit juice
- 1 cup whipped cream flavored vodka
- 1 grapefruit zest of grapefruit
Instructions
- Bring the water and sugar to a slight boil for 15 minutes stirring frequently until sugar dissolves completely. Once dissolved, remove from heat then let cool. Add in 2 cups ruby red grapefruit juice, stirring well to combine.
- Pour mixture into a loaf pan or Tupperware container and allow it to freeze overnight. When ready to serve, scrape granita into individual glasses or cups then garnish with fresh mint.
Recipe question-
The ingredients list 1 cup of grapefruit juice, but instructions state add 2 cups of grapefruit juice. Which is correct?
