Instructions
 

  • In a large bowl, whisk the eggs, milk, salsa, and salt together until completely combined.
  • Add the tortilla chips and toss to combine.
  • Pour into a 10” cast iron skillet. Cover and refrigerate for at least 1 hour our up to overnight.  
  • When ready to bake, preheat the oven to 375 degrees Fahrenheit.  
  • Bake for 30-40 minutes or until the eggs have completely set. Sprinkle the top with the cheese, then place back into the oven to melt, about 1-2 minutes.  
  • Serve with cilantro, crema, salsa, and green onion. Enjoy!
