Overnight Chilaquiles Casserole:
+ Using a cast iron skillet helps really crisp up your chilaquiles in the oven. If you don’t have one, you can just use a regular glass baking dish and broil for a few minutes before you top with the cheese.
+ This is an easy recipe to customize with your family’s favorite ingredients or what you have on hand. Substitute your favorite meat (shredded beef and chorizo are also delicious in this recipe), use your favorite salsa, and top with all your favorite fresh herbs and veggies.

- In a large bowl, whisk the eggs, milk, salsa, and salt together until completely combined.
- Add the tortilla chips and toss to combine.
- Pour into a 10” cast iron skillet. Cover and refrigerate for at least 1 hour our up to overnight.
- When ready to bake, preheat the oven to 375 degrees Fahrenheit.
- Bake for 30-40 minutes or until the eggs have completely set. Sprinkle the top with the cheese, then place back into the oven to melt, about 1-2 minutes.
- Serve with cilantro, crema, salsa, and green onion. Enjoy!
