  • 1/4 cup chicken broth
  • 2 cups salsa, (we used salsa verde)

  • In your instant pot, stir together the chicken broth and salsa. Nestle the chicken breasts in the liquid and cover.
  • Pressure cook on high for 15 minutes, then allow 7 minutes for natural release.
  • Shred the chicken in the instant pot, stirring the shredded chicken with the salsa.

For Serving

  • Cook the cauliflower rice according to package directions – we recommend sauteing vs microwaving to avoid sogginess.
  • Serve the chicken on top of the cauliflower rice with desired toppings and enjoy!
