This easy macro friendly breakfast can be made with any color bell pepper. Red bell peppers will have the sweetest flavor, while green bell peppers will be more on the bitter side. Both are delicious, especially when you switch up your seasonings and toppings.
Air Fryer Bell Pepper Egg in a Hole Recipe Tips:
+ You can also add bacon, ham, or slices of cheese to this recipe. Just put it at the bottom of the bell pepper before you add the egg so it doesn’t fly off in the air fryer.
+ If you don’t have an air fryer, you can also make this dish in the oven. Just bake in the oven at 325 degrees for 10-15 minutes. Continue to cook in 2 minute increments as needed, until the eggs are cooked through.

- 1 large bell pepper
- 2 eggs
- salt and pepper to taste

- Slice the bell pepper in half and remove and discard the membrane and seeds.
- Place the halves in the air fryer, leaning them up against each other to keep level if needed. Carefully crack an egg into each bell pepper half and season with a pinch of salt and pepper.
- Air fry at 300 degrees for 8-12 minutes, checking at the 8 minute mark to see if the eggs are cooked through and continuing to cook in 2 minute increments if not, until the eggs are cooked through.
- Remove and let cool for 2 minutes, then serve with hot sauce and herbs like chopped chives if desired!
