Sausage, Apple and Rice Casserole

Any leftovers you may have warm up really well. Just store leftovers in an airtight container and sprinkle a little water over the top before warming them up in the microwave.
Sausage, Apple and Rice Casserole Recipe Tips:
+ You don’t need your rice to be cooked prior. It will cook when you bake your casserole in the oven.
+ Allowing your cream cheese to come to room temperature will make mixing this all together so much easier.
+ If you have hot honey on hand, you can use that and skip the red pepper flakes.
Sausage, Apple and Rice Casserole
Ingredients
- 2 tbsp butter, or olive oil
- 2 green apples, diced
- 1/2 onion, diced
- 2 celery stalks, diced
- 4 oz cream cheese, softened
- 1 tbsp honey
- pinch red pepper flakes
- pinch salt and pepper
- 4 cups vegetable broth
- 1 lb sweet Italian sausage, cooked
- 1 cup long grain white rice
Instructions
- Preheat the oven to 350 degrees Fahrenheit.
- Heat a large skillet over medium heat and add the butter. Once melted, add the apples, onion, and celery. Saute for about 5-7 minutes or until softened. Remove from the heat.
- In a mixing bowl, whisk together the cream cheese, honey, red pepper flakes, salt and pepper, and vegetable broth. There will be some cream cheese chunks, this is okay as it will be mixed in later on.
- Add the sauteed apple mixture, rice, and cooked sausage. Pour into a baking dish and cover with foil. Bake covered in the oven for 1 hour.
- After the hour is up, remove the foil and stir the rice mixture. Turn the heat to 450 and bake uncovered for another 10-15 minutes or until the top is golden.
- Serve immediately and enjoy!
this dish had a good flavor, but it was mushy. If I make it again, I will not sauté the celery, onions and apple first. It cooks long enough for them to cook in the oven. I would also add some kind of cheese on top, maybe a mixture of parmesan and panko to give it a little crunch
I’m so sorry to hear that! I’ve made this recipe several time following these steps and have not run into that problem. Did you cover your dish? You already said you followed the oven temperature and time, so I don’t think that would be the case. The only other thing I could think of is if maybe the measurements for the rice / liquid were off when you tried it? No matter what happened, I’m still sad to hear it did not turn out for you.
This recipe did not come out AT ALL. We cooked it EXACTLY as written and the liquid did not cook off and the rice did not cook. It came out looking like soup and the rice was still crunchy! We even have an oven thermometer so it wasn’t our oven… This was a huge disappointment and waste of food and money.
