Peanut Edamame Crunch Salad Recipe Tips:
+ If you don’t have rice wine vinegar on hand, you can use white vinegar, lime juice, or dry white wine as a substitute.
+ Coconut aminos is a sauce with a similar taste to soy sauce, but with less sodium content. You can use soy sauce as a substitute or tamari if you have some on hand.

Peanut Edamame Crunch Salad
Ingredients
Dressing
- 1/4 cup coconut aminos
- 3 tbsp rice wine vinegar
- 1 tbsp creamy peanut butter
- 1/2 tbsp pure maple syrup
- 1 tsp toasted sesame oil
- 1" knob fresh ginger, grated
- 1 clove garlic, grated
Salad
- 1 1/2 cups cooked quinoa, cooled
- 3/4 cup edamame, shelled
- 2 cups napa cabbage, shredded
- 2 cups red cabbage, shredded
- 1 carrot, shredded
- 1 cucumber, sliced into half moons
- 1/4 cup green onion, sliced
- 1/4 cup fresh cilantro, chopped
- 1/2 cup peanuts, chopped
Instructions
- Make the dressing by whisking together all of the ingredients until combined.
- In a large bowl, add all of the salad ingredients except the peanuts and toss to combine.
- Pour the dressing over the salad and toss again. Garnish with the peanuts and enjoy!
