Spruce up happy hour with a few basic ingredients. You probably already have them in the kitchen too. This Tom Collins cocktail has been popular since the mid-nineteenth century and is a favorite among gin lovers.

Dry gin (or ‘London Gin’) is mixed together with fresh lemon juice, powdered sugar and carbonated water and served over lots of ice. Simple right? The finished product is pleasing to the eye with a lemon wedge and a maraschino cherry.

After playing around with our recipe in the test kitchen, we were curious to discover what classifies a cocktail as belonging to the ‘Collins’ family. We discovered a ‘Collins cocktail’ simply refers to any alcoholic beverage that contains elements of sweet and sour!

  • Combine gin, lemon juice and powdered sugar in a cocktail shaker then stir well.
  • Strain mixture into serving glasses prepared with fresh ice. Add a splash of club soda, stirring gently. Garnish with lemon slices and cherries, if desired.

Notes

You can substitute bourbon, brandy, rum, tequila, vodka or any other liquor of your liking rather than using gin.
