Gluten-Free Zucchini Fritters
Summer’s favorite vegetable got a crispy upgrade. These gluten-free zucchini fritters are a great way to use the all-star vegetable for a quick snack or appetizer. Loaded with onion and parmesan cheese, they’re crispy on the outside but tender when you take a bite. It’s surprisingly easy to whip these up and let them cook in the air fryer, rather than in a pan of hot oil. (Bonus: This is a much healthier way of making them too because you use way less oil. Talk about a win!)
We whipped up a yogurt dill sauce, too, for a refreshing drizzle or dunk alongside the fritters. (It’s also delicious as part of a crudite or as an easy salad dressing.) You’ll probably forget you’re even eating vegetables, making air fryer zucchini fritters ultra kid-friendly to boot.

Gluten-Free Zucchini Fritters
- You want to make sure you really wring out as much water as possible so these air fryer zucchini fritters crisp up. A cheesecloth makes this so much easier.
- Store in an airtight container in the refrigerator for up to 3 days.
- Reheat by placing back in the air fryer at 350 for 5-10 minutes.
Gluten-Free Zucchini Fritters in the Air Fryer
Ingredients
Zucchini Fritters
- 4 medium zucchini
- 1 cup almond flour
- 2 eggs
- 1/4 cup grated Parmesan cheese
- 1/4 sweet onion, finely diced
- salt and pepper to taste
- green onions
Yogurt Dill Sauce
- 3/4 cup unsweetened yogurt
- 1 clove garlic
- 2 tbsp chives, chopped
- 1/4 tsp dried dill
- 1/2 lemon, juiced
- salt and pepper to taste

Instructions
- Make the yogurt sauce by whisking together all ingredients in a bowl. Cover and place in the fridge until ready to serve.
- Grate the zucchini and place in a colander with a pinch of salt. Let sit for 5 minutes.
- Use a cheesecloth or kitchen towel to wring out the zucchini, getting rid of as much liquid as possible. Once drained, place into a large bowl.
- Add the rest of the fritter ingredients and mix to combine.
- Scoop ⅓ cup of the fritter mixture and form a little patty. Place on the air fryer sheet. Repeat with the rest of the fritters. You may have to do 2 batches.
- Cook in the air fryer at 350 degrees for 10 minutes, then raise the temperature to 425 degrees and cook for two more minutes for that final crisp.
- Serve with the yogurt dill sauce and fresh green onions and enjoy!
