BBQ Salmon Chopped Salad
This BBQ Salmon Chopped Salad has all the best flavors of summer, in the form of a healthy (yet still filling) salad. BBQ sauce and Cajun seasoning make for super flavorful bites of salmon, while black beans, corn, and tomatoes add volume to this salad making it a complete meal.
This Garlic Lime Dressing is the perfect compliment to the deep BBQ flavor of the salmon. However, if you wanted to do a traditional ranch or bleu cheese dressing, that would be a delicious option as well. Or if you want a vinaigrette but a different flavor, give our Honey Mustard Dressing a try.

BBQ Salmon Chopped Salad
Ingredients
- 1 head romaine lettuce
- 1 cup black beans, drained and rinsed
- 1 cup corn kernels
- 1/4 cup green onion, chopped
- 1-2 tomatoes, diced
- 4 4 – 6 oz salmon filets, without skin
- 2 1/2 tbsp Cajun seasoning, (8 tsp)
- Avocado oil
- 1/4 cup BBQ sauce, to serve
Garlic Lime Dressing
- 1/4 cup extra virgin olive oil
- 2 tbsp lime juice
- 1 tbsp mayonnaise
- 1 tbsp honey
- 1 clove garlic, minced
- salt and pepper to taste
Instructions
- Add all ingredients for the dressing to a small bowl or jar. Whisk or shake with the lid on until well combined and smooth, about 10 seconds.
- Make the salmon: Heat the oven to a high broil. Rub each filet with a spoonful of oil. Sprinkle each filet with about 2 tsp cajun seasoning, then rub all over the salmon. Place on a baking sheet and broil in the oven for 8-11 minutes, depending on the thickness of the filets, until cooked through. Remove and let cool slightly.
- Assemble the salad: Toss the lettuce with desired amount of salad dressing. Place a bed of lettuce in 4 separate serving bowls. Top each salad with the black beans, corn, and tomatoes. Sprinkle with green onion. Top with the cooked salmon filets and drizzle with desired amount of BBQ sauce!
