Pesto Chicken Salad
This Pesto Chicken Salad is such a delicious high protein chicken recipe for weight loss. We incorporate some Greek yogurt to up the protein content and lower the calories from traditional chicken salad. Plus we add some pesto sauce to add a ton of delicious flavor. Serve it up with some crackers, carrot or celery sticks, or a big lettuce leaf as a wrap!

Pesto Chicken Salad
Ingredients
- 1/2 cup plain Greek yogurt
- 2 tbsp low-fat mayonnaise
- 1/3 cup pesto
- 1 tsp apple cider vinegar
- 1/2 cup red onion, finely diced
- 1 1/2 lbs chicken breasts, cooked and shredded
- salt and pepper to taste
Instructions
- In a large bowl, whisk together the yogurt, mayo, pesto, vinegar, and a pinch of salt and pepper.
- Stir in the cooked and shredded chicken and diced red onion. Taste and add more salt and pepper as needed.
- Serve as desired and enjoy!
