Apple Cinnamon Oatmeal Cookie – Healthy Christmas Cookie

This Apple Cinnamon Oatmeal Cookie is made with oats, chunks of apple, and plenty of cinnamon for festive holiday flavor without using flour or traditional sugar. That’s a win-win in our book!

We love that this oatmeal cookie recipe is refined sugar free. It relys on maple syrup and apple sauce for it’s sweetness instead of traditional white sugar. + Using a cookie scoop makes it so much easier to ensure you have similar sized cookies that bake evenly. If you don’t have one, you could also use an ice cream scoop!

Apple Cinnamon Oatmeal Cookie – Healthy Christmas Cookie
Ingredients
- 2 eggs
- 1 1/2 cups old-fashioned oats
- 1 1/2 cups apple, grated or finely diced (1 medium / 2 small apples)
- 1/2 cup apple sauce
- 1/4 cup pure maple syrup
- 2 tsp apple pie spice, or ground cinnamon
- pinch salt

- Preheat the oven to 350 degrees Fahrenheit.
- Whisk the eggs in a large bowl, then add the remaining ingredients and stir to combine.
- Let sit for 10 minutes, then use a cookie scoop to dollop the mixture 1 inch apart on one or two large cookie sheets. Press down on each dollop, shaping the mixture into a cookie shape
- Bake for 10-12 minutes or until firm. Let cool for 5-10 minutes to set further.
