Apple Cinnamon Oatmeal Cookie – Healthy Christmas Cookie

  • 2 eggs
  • 1 1/2 cups old-fashioned oats
  • 1 1/2 cups apple, grated or finely diced (1 medium / 2 small apples)
  • 1/2 cup apple sauce
  • 1/4 cup pure maple syrup
  • 2 tsp apple pie spice, or ground cinnamon
  • pinch salt

  • Preheat the oven to 350 degrees Fahrenheit.
  • Whisk the eggs in a large bowl, then add the remaining ingredients and stir to combine.
  • Let sit for 10 minutes, then use a cookie scoop to dollop the mixture 1 inch apart on one or two large cookie sheets. Press down on each dollop, shaping the mixture into a cookie shape
  • Bake for 10-12 minutes or until firm. Let cool for 5-10 minutes to set further.
