2–3 sprigs of fresh thyme
2 tablespoons unsalted butter, melted

- Preheat and prep
Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper if that helps with cleanup and prevents sticking. - Toss carrots and apples
Place the sliced carrots and Cosmic Crisp® apple slices on the sheet pan. Drizzle with the olive oil, then sprinkle on the salt, black pepper, onion powder, and garlic powder. Lay the rosemary sprig and the thyme sprigs on top. - Roast the vegetables and fruit
Roast in the preheated oven for about 12 minutes. Then stir everything gently to ensure even cooking, and roast for an additional 10 minutes. The goal is for the carrots to soften and the apples to begin caramelizing. - Make the maple butter glaze
While the carrots and apples are roasting, whisk together the melted butter and pure maple syrup in a small bowl until smooth. - Glaze and finish under the broiler

- 1 1/2 tbsp pure maple syrup

Instructions
- Preheat the oven to 425 degrees Fahrenheit and line a large baking sheet with parchment paper if needed.
- Add the carrots, apples, olive oil, salt, pepper, onion powder, garlic powder, rosemary, and thyme to the baking sheet. Toss until everything is combined.
- Roast for 12 minutes then stir and roast for another 10 minutes.
- Meanwhile whisk together the melted butter and maple.
- When the last 10 minutes are up, remove the pan from the oven. Remove the thyme and rosemary sprigs, then pour the butter and maple over the top and toss until everything is combined.
- Turn the oven to broil and broil for 3-7 minutes or until everything is tender and just beginning to char and crisp up. Just watch the sheet pan during this step since every oven varies on time needed with broiling.
