Vegan Black Bean Soup
This vegan black bean soup is an incredibly flavorful recipe. One of the best parts of enjoying this soup is getting creative with the toppings. We love fresh cilantro, lime juice, pickled red onions, radish slices, vegan cheese or a vegan cashew crema.
Vegan Black Bean Soup Recipe Tips:
+ Using an immersion blender makes it incredibly easy to whip up this soup. If you don’t have one, you can use your regular blender. You’ll need to let the soup cool slightly and then ladle it into your blender. Fill the blender only about 1/3 of the way and blend on a low speed.
+ Using a poblano pepper gives this black bean soup recipe a earthy and slightly smoky flavor with mild heat. You can substitute green peppers if you want it to be more mild and crisp, or jalapeño peppers to kick up the spice.
+ This is a great soup to make ahead of time. You can even freeze it and reheat it at a future time! (We find it works best to reheat frozen soup on the stovetop.) And you’ll want to make sure you wait to add any toppings until you’re ready to enjoy. Otherwise they’ll get lost in the soup and you won’t have your creamy texture.
Vegan Black Bean Soup
Ingredients
- 1 tbsp olive oil
- 1/2 large sweet onion, diced
- 1/2 poblano pepper, diced
- 3 cloves garlic, minced
- 1 tsp paprika
- 1 tsp cumin
- 1 tsp chili powder
- 13 ounces fire roasted diced tomatoes
- 4 ounces diced green chilis
- 39 ounces black beans, canned, drained
- 1 1/2 tsp salt
- 2 cups vegetable broth

- Heat a large pot over medium heat and add the olive oil.
- Once hot, add the onion and poblano.Saute for about 5 minutes or until soft and fragrant.
- Add the garlic, paprika, cumin, and chili powder. Saute for another minute.
- Add the tomatoes, chiles, black beans, salt, and vegetable broth. Stir to combine.
- Bring to a simmer and reduce the heat to medium low. Cover and let simmer for about 30 minutes.
- Use an immersion blender to blend until mostly smooth. It’s okay if a few chunks remain. Taste and adjust seasonings if needed.(See recipe tips if you don't have an immersion blender.)
- Serve and garnish as desired and enjoy!
