Spicy Cucumber Salad

Spicy Cucumber Salad Recipe Tips:
+ The reason you want to toss your cucumber with salt and let it sit for 30 minutes is to draw the moisture out. This will prevent your cucumber from getting soft and soggy when you mix it with the salad dressing.
+ Chili crunch is getting more popular and easier to find in most grocery stores. (We love the Momofuku and Trader Joe’s options.) However, if you can’t find it, you can simply use some red pepper flakes and a bit of olive oil.
Spicy Cucumber Salad
Ingredients
- 4 cucumbers, halved and sliced
- 1 tsp salt
- 1/4 cup coconut aminos, or soy sauce
- 3 tbsp rice vinegar
- 1 tbsp sesame oil
- 1 tbsp chili crunch, more or less to taste
- 1/2 tbsp honey, (use 1 tbsp if using soy sauce)
- 2 cloves garlic, minced
- 1 tbsp ginger, freshly grated
- 1/3 cup green onion, sliced
Instructions
- Toss the cucumbers with the salt and let sit for about 30 minutes.
- Drain and rinse the salt from the cucumbers in a mesh strainer. Let any excess water drip out.
- In a bowl, whisk together the remaining ingredients. Pour the cucumbers into the mixture and toss to coat.
- Cover and refrigerate for at least 30 minutes or longer before serving. Enjoy!
