Pineapple Mojito Cocktail
Nothing says summer like a mojito cocktail—but sometimes, you just want something with a little more pizzazz. Our pineapple mojito cocktail recipe is playful, sweet and just a little tart—just what we want come happy hour when we’re ready to let our hair down!
When making this cocktail, it’s important to muddle the mint well along with the granulated sugar to release the oils of the mint. During the first run in the test kitchen, we forgot to muddle the mint (hey, we were distracted by the rum) and the drink flopped completely.
You can swap the sugar for imitation sugar if you like, but we recommend sticking with regular sugar for a more authentic taste. We’ve also experimented plenty with trying to blend actual pineapple into a drink, and the results are always lackluster. Therefore, pineapple juice is the way to go. Toss the ingredients in a metal shaker then give it a good rattle—add a splash of club soda before serving and enjoy!
Pineapple Mojito Cocktail Recipe
Ingredients
- 10 leaves fresh mint
- 2 tsp sugar
- 6 oz pineapple juice
- 4 oz white rum
- juice of 1/2 of a lime
- club soda
- sprigs mint, for garnish if desired
Instructions
- Muddle mint and sugar in cocktail shaker.
- Add ice, pineapple juice, white rum and lime juice. Shake vigorously then strain into glasses.
- Add splash of club soda then garnish with fresh mint. Serve immediately.
