Tips for the Best Brown Butter Pumpkin Loaf

Don’t rush the brown butter. Keep an eye on it as it cooks and stir frequently, scraping the bottom and sides of the pan. You’ll know it’s ready when it turns golden brown and smells nutty and fragrant.

Save those brown bits! They’re full of flavor. When you transfer the butter to your mixing bowl, make sure to scrape all those delicious browned milk solids from the bottom of the saucepan.

Don’t overmix the batter. Once the dry ingredients are added, fold just until everything is combined. Overmixing can make the loaf dense instead of soft and tender.

Start checking early. Oven temperatures can vary, so begin checking the loaf around 50 minutes. You’re looking for a toothpick that comes out clean or with a few moist crumbs attached.

  • 12 tablespoons salted butter (I love Kerrygold)
  • 1/2 cup white sugar
  • 1/2 cup brown sugar
  • 2 eggs
  • 15 ounces pumpkin puree (NOT pumpkin pie filling)
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 3 teaspoons pumpkin pie spice
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2/3 cup powdered sugar
  • 2 tablespoons maple syrup
  • Pinch of salt

How to Make Pumpkin Loaf

Prepare the pan. Preheat the oven to 350°F and line a loaf pan with parchment paper.

Brown the butter. Place the butter in a small saucepan over medium heat. Once melted and bubbling, reduce the heat to medium-low. Continue to simmer, stirring frequently and scraping the sides and bottom of the pan, until the butter turns golden brown and smells nutty and fragrant.

Cool the butter. Pour the brown butter into a large mixing bowl, making sure to scrape in all of those flavorful brown bits. Allow it to cool for about 10 minutes.

Reserve butter for the glaze. Scoop 4 tablespoons of the brown butter into a separate bowl and set aside for the glaze.

Add the sugars. Add the white sugar and brown sugar to the remaining brown butter. Whisk until well combined.

Add the wet ingredients. Whisk in the pumpkin, eggs, and vanilla extract until smooth.

Combine the dry ingredients. In a separate bowl, whisk together the flour, pumpkin pie spice, baking soda, baking powder, and salt.

Make the batter. Fold the dry ingredients into the wet ingredients until just combined. Be careful not to overmix.

Bake. Pour the batter into the prepared loaf pan and bake for 50–60 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs. Start checking at 50 minutes so you don’t overbake the loaf.

Cool. Remove the loaf from the oven and allow it to cool almost completely before glazing.

Make the glaze. If the reserved brown butter has hardened, place it in a microwave-safe bowl and microwave briefly until melted. Whisk in the powdered sugar, maple syrup, and a small pinch of salt until smooth.

Glaze the loaf. Pour the glaze over the cooled pumpkin loaf and allow it to set. Some of the glaze may melt slightly into the loaf because of the brown butter — this is completely normal and makes it even more delicious.

Slice and serve. Once the glaze has set, slice the loaf, serve, and enjoy!

Storage

Store the pumpkin loaf in an airtight container at room temperature for a few days. You can also refrigerate it if you prefer, although I recommend letting individual slices come closer to room temperature before serving for the best texture. This loaf is also freezer-friendly. For the best results, freeze the loaf without the glaze, then thaw and glaze before serving.

  • Whisk in the pumpkin, eggs, and vanilla extract until smooth. 
  • In another bowl whisk together the flour, pumpkin pie spice, baking soda, baking powder, and salt until combined. 
  • Fold the dry ingredients into the wet until just combined. Do not overmix.

  • Meanwhile make the glaze. Place the brown butter into a microwave safe bowl and melt again if it has hardened. 
  • Whisk in the powdered sugar, maple, and a small pinch of salt until combined.
  • Remove the loaf from the pan and pour the glaze over the top of the loaf and allow to set. Some of the glaze should melt into the loaf due to the butter- this is okay and what you want to see! 
  • Once the glaze has set, slice, serve, and enjoy!
