Sweet Potato Pie Bites Recipe Tips:
+ If you want to make these sweet potato bites ahead of time, follow the steps below. Slice up your sweet potatoes and store them in an airtight container. (Do not bake them yet.) Follow step 5 for preparing your caramelized pecans and store them in an airtight container at room temperature when they are done. Follow step 6 for preparing the frosting and store it in an airtight container in the refrigerator. When you’re ready to enjoy these sweet potato bites, follow steps 3 & 4 for baking them and then jump ahead to step 7 to assemble them.
+ Using a mandolin slicer will help you slice your sweet potatoes quickly and evenly. Just be sure to use the food holder or a cutting glove to protect your fingers!
Sweet Potato Pie Bites
Ingredients
- 2 sweet potatoes
- olive oil spray
- salt , to taste
- 2 tbsp butter
- 1 cup pecans, chopped
- 1 tbsp pure maple syrup
- 2/3 cup brown sugar, divided
- 8 ounces cream cheese, room temperature
- 1/4 tsp cinnamon
- 1/2 tsp vanilla extract

- Preheat the oven to 425 degrees Fahrenheit and line a large baking sheet with parchment paper.
- Wash and scrub the sweet potatoes and then dry completely. Cut them into ¼-½" rounds.
- Place the rounds on the prepared baking sheet and spray with the oil, flip, and spray the other side with oil. Sprinkle a pinch of salt over the top.
- Bake for about 20-25 minutes or until fork tender. Remove and let cool.
- While the sweet potatoes are baking, heat a skillet over medium heat and add the butter. Once the butter is melted add the maple syrup and 1/3 cup of brown sugar. Whisk until a caramel-like consistency has formed. Add the pecans and a pinch of salt and sir to combined. Remove from the heat.
- In a large bowl, beat the cream cheese, vanilla, cinnamon, and the remaining 1/3 cup of brown sugar until light and fluffy.
- Spread a heaping ½ tbsp of the cream cheese mixture over each sweet potato round, followed by a small spoonful of the candied pecans and enjoy!
