  • Pour egg whites in the bowl of a stand mixer with the whisk attachment. Add lemon juice. Whip eggs whites to a soft peak.
  • Add the sugar slowly. When the whites first start to get glossy, add the vanilla and continue to whip until you reach stiff glossy peaks. You can test this by pulling out the whisk and dipping it into the meringue. If a strong wisp appears and holds it shape, that is considered a stiff peak.

Notes

You may substitute regular granulated sugar in place of superfine sugar but it won’t dissolve as easily.
