Quick soak beans takes 5 minutes to prep, 5 minutes to cook and 1 hour of wait.
You’ll start by thoroughly rinsing 1 lb dried small red beans and discard any rocks or debris.
In a large pot, add 3 Tbsp of salt to approximately 3 qts of water. Bring the beans to a rolling boil and add 1 Tbsp of baking soda. The water will foam for about 30 seconds.
Remove pan from the heat, cover and let it sit for 1 hour. Drain the water from the pot and thoroughly rinse the beans with fresh water. Done!
