Instructions
 

  • Heat a large pot over medium heat and add the sausage. Cook through completely and then remove from the pan.  
  • De-glaze the pot with the white wine. Let cook for 1 minute and then add the onion, carrot, and celery. Cook for about 5 minutes or until soft and fragrant. Add the garlic and cook for another minute.  
  • Add the tomato paste, oregano, basil, salt, and pepper. Stir and cook for about 1 minute. 
  • Add the chicken broth and bring to a light boil. Add the tortellini and cook according to package directions.  
  • Once the tortellini is cooked, add back in the sausage, heavy cream, parmesan, and spinach.
  • Stir and cook for another minute until the spinach has completely wilted.  
  • Serve and top with more parmesan if desired and enjoy!
