Mediterranean Salad
Is there anything more refreshing on a hot summer day than a big, hearty salad? This Mediterranean Salad recipe features all the fresh flavors you know and love from the Mediterranean with ingredients like cucumbers, tomatoes, olives, and pepperoncinis. We also tossed in a big serving of chickpeas to up the protein content of this salad. To finish it off, we have a delicious and totally simple salad dressing featuring easy pantry-staple ingredients. Whip this up any time you want a big serving of vegetables that also delivers a ton of delicious flavor.

Mediterranean Salad Recipe Tips:
+ You could also toss in some quinoa to add some more bulk and protein to this recipe! Tip: make a large batch of quinoa at once and freeze it. Then defrost it the day before you’re ready to enjoy it so you always have some on hand.
+ If you’re not following a vegan diet, you could also incorporate some feta cheese for a tangy and delicious addition.
+ This is a great recipe for meal prep. Just don’t mix the dressing in until you’re ready to eat.
Mediterranean Salad
Ingredients
Salad
- 8 cups greens of choice
- 14 oz can chickpeas, drained and rinsed
- 2 persian cucumbers, thinly sliced
- 1 cup cherry tomatoes, diced or quartered
- 1/3 cup fresh parsley, chopped
- 4 green onions, thinly sliced
- 1/2 cup pepperoncinis, chopped
- 1/2 cup Kalamata olives
- 1 cup baby bell peppers, sliced
Salad Dressing
- 1/3 cup red wine vinegar
- 1/2 lemon, juiced
- 1/3 cup extra virgin olive oil
- 1 tbsp Dijon mustard
- 1 tbsp agave syrup, or honey
- 1 clove garlic, grated
- 1/2 tsp dried oregano
- salt and pepper to taste
- crushed red pepper flakes, optional
Instructions
- Combine all of the dressing ingredients into an airtight jar and place the lid on. Shake vigorously until everything is combined and emulsified. Set aside.
- Combine all of the salad ingredients in a large bowl and pour desired amount of dressing overthe top. Toss to combine and enjoy!
