Greek Yogurt Chocolate Bars Recipe Tips:
+ You can easily switch these up by using your favorite flavored Greek yogurt and skipping the peanut butter and maple syrup. Or even try mixing in your favorite jam instead of peanut butter. The possibilities are really endless!
+ To get your Greek yogurt chocolate bars to the ideal “eating” temperature after they’re fully frozen, rinse them under some room temperature water. This will also remove ice crystals if you’ve had them in the freezer for a few days.
Greek Yogurt Chocolate Bars
Ingredients
- 16 oz plain Greek yogurt
- 3 tbsp pure maple syrup
- 1/3 cup creamy peanut butter, (we used unsweetened)
- 6 oz dark chocolate, chopped if needed
- 1 tbsp coconut oil
- popsicle sticks
- Flaky Sea Salt, optional
Instructions
- Whisk together the yogurt, maple syrup, and peanut butter until combined.
- Line two baking sheets with wax or parchment paper. Pour about ¼-½ cup of the yogurt mixture on to the lined baking sheet and form into a circle. Place a popsicle stick straight into the center and cover with more yogurt mixture.
- Repeat with the remaining yogurt mixture. Depending on how big you make them, it should make 6-8 pops.
- Freeze for 4 hours to completely harden.
- Melt the chocolate and coconut oil together over a double boiler. Once melted, let cool slightly.
- Dip each frozen yogurt bar in the chocolate, letting any excess drip off. Place back onto the parchment paper and sprinkle with sea salt if desired.
- Place back into the freezer for at least 15 minutes for the chocolate to set.
- Enjoy when fully frozen.
