Marinated and Grilled Vegetables
Balsamic vinegar is a strong flavor that goes a long way in seasoning the food it’s added to. We marinated fresh vegetables in the rich vinegar alongside naturally sweet maple syrup, tart lemon, and zesty garlic. It’s a good meal or side dish to enjoy when you want to appreciate the taste and texture of nutrient-dense vegetables like zucchini and bell pepper. A hot grill is all you need to bring out those natural flavors and create a nicely charred texture for your grilled vegetables.

You can easily swap out some of the vegetables with whatever is local and seasonal to you. Just remember to keep an eye on the timing so everything is ready at the same time. Denser vegetables like sweet potatoes and carrots will take longer to cook than thinner more water based vegetables like bell peppers and zucchini. Grilled Vegetables Recipe Tips:
+Make sure the grill is preheated and hot before you place your vegetables on the grill. That way they won’t get soggy and will get that nice char.
+ When removing the cooked vegetables from the grill, avoid stacking them. This will steam the vegetables and take away the crisp edges.
Marinated Grilled Vegetables
Ingredients
Marinade
- 1/3 cup olive oil
- 2 tbsp balsamic vinegar
- 1 tbsp maple syrup
- 1/2 lemon, juiced
- 1 clove garlic
- 1/2 tsp dried thyme
- salt and pepper, to taste
Vegetables
- 1 large zucchini, sliced lengthwise and in half
- 1 medium red bell pepper, chopped into jumbo chunks
- 1 medium yellow bell pepper, chopped into jumbo chunks
- 1/2 bunch asparagus, trimmed (about 6 stalks)
- 4 ounces baby bella mushrooms, trimmed (about 6 mushrooms)

- 1 Grill
Instructions
- In a small bowl, mix together the ingredients for the marinade.
- In a large bowl or shallow baking dish, add sliced zucchini, chopped red and yellow bell peppers, trimmed asparagus, and trimmed mushrooms. Pour marinade over vegetables and toss.
- Allow vegetables to sit in marinade for 30 minutes, tossing and stirring occasionally to coat all vegetables in the marinade. When the 30 minutes are almost up, preheat the grill to medium-high, approximately 500º F.
- When the grill is hot, use tongs to place marinated vegetables on the grill. Grill vegetables approximately 2-3 minutes per side or until just charred and cooked to your liking. All vegetables should be done around the same time.
- Remove vegetables from the grill and serve immediately.
