Bananas foster is a favorite dessert of ours, so we decided to combine our love of breakfast with hearty einkorn flour in a single recipe. Our bananas foster crepes come together in just under an hour and they’re an exceptional morning treat! If you don’t have einkorn flour yet, you can make homemade crepes using traditional all-purpose flour.

Crepes are ridiculously easy to make, and we used einkorn flour in this recipe especially for our friends who are sensitive to wheat. If you’re short on time, and frankly who isn’t, you can also purchase the traditional pre-made variety at the supermarket. Just look in the bakery section or in the freezer aisle near the frozen breakfast items.

The bananas foster part of this breakfast couldn’t be easier to prepare. It just takes a couple of minutes, and if you have leftovers, it tastes great over ice cream! Don’t worry about the rum in this dish; it will burn off in the cooking process so it’s okay for the kids to enjoy.

Instructions
 

  • Prepare einkorn crepes according to the recipe.
  • Prepare bananas foster according to the recipe.
  • When ready to serve, loosely roll the crepes into a cigar shape. Briefly reheat the sauce and arrange bananas over each serving, Spoon some sauce over the top and enjoy!

Add a dollup of homemade whipped cream (dairy or dairy-free) and a drizzle of hot fudge sauce—dessert is served!
