Protein Banana Bread
Ingredients
- 4 overripe bananas, mashed
- 3/4 cup coconut sugar
- 2 eggs
- 1 tsp vanilla extract
- 1/4 cup butter, melted and cooled
- 3/4 cup plain Greek yogurt
- 1 1/3 cup all purpose flour
- 2 scoops vanilla protein powder
- 1 tsp baking soda
- 1/2 tsp salt
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
Instructions
- Preheat the oven to 350 degrees Fahrenheit and grease a standard loaf pan.
- In a large bowl, whisk together the mashed bananas, coconut sugar, eggs, vanilla, butter, and Greek yogurt until well combined.
- Fold in the flour, protein powder, baking powder, salt, cinnamon, and nutmeg. Be sure not to overmix.
- Spread mixture into the loaf pan and bake in the preheated oven for about 45-60 minutes or until a toothpick inserted into the center comes out clean.
Umm, this was way better than I expected! Delicious! The cinnamon and nutmeg give it a nice flavor and it is moist! I used Okios Protein yogurt instead and worked well – was hoping for a little more protein but it didn’t alter the calories/protein/fat much at all.
Very moist and delicious. I added walnuts as they are very heart healthy and add a nice crunch.
