Loaded Baked Potato Casserole
Loaded baked potatoes are one of our all-time favorite side dishes. But making a big batch of them for a holiday dinner or even dinner party can be incredibly time consuming and challenging to serve up. Enter this make-ahead loaded baked potato casserole. It’s an easy way to prep a big batch of loaded baked potatoes at once, AND you make it ahead of time.

The fact that this casserole can be made ahead of time is one of our favorite parts of this dish! Prep it in a casserole dish and cover for up to 12 hours. Then, just pop it in the oven right before you’re ready to serve it up. If you’re bringing it somewhere, use an insulated casserole carrier to keep it at the right temperature.
Loaded Baked Potato Casserole Recipe Tips:
+ If you don’t have mascarpone cheese on hand, you can use cream cheese or cottage cheese as a substitute. You’re really just wanting to add some creaminess to this dish.
+ Want to add a little oomph to this dish? Throw in some garlic powder, or diced jalapeños, or even a bit of chili.
Loaded Baked Potato Casserole
Ingredients
- 2 lbs gold potatoes, scrubbed
- 1/2 cup sour cream, or Greek yogurt
- 1/2 cup mascarpone cheese
- 1/4 cup green onions, chopped, plus more to top
- 2 tbsp butter, melted
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1 1/2 cup shredded cheddar cheese, divided
- 1/2 cup bacon bits
Instructions
- Bake the potatoes at 400 degrees for 45-60 minutes or until fork tender. Let cool to room temperature.
- Roughly chop the potatoes and add to a large bowl with the sour cream, mascarpone, green onion, butter, salt, pepper, and 1 cup shredded cheddar. Mix until well combined. Spread into a medium baking dish and top with the remaining ½ cup cheddar.
- If cooking immediately, bake in the preheated oven for about 15-20 minutes or until the cheese is melted. If saving for later, cover and transfer to the fridge. When ready to bake, uncover and bake at 350 degrees for 30-35 minutes or until warmed through and the cheese is melted.
- Remove from heat and top with the bacon and more green onion if desired.
- Serve hot and enjoy!
