  • Oven times will obviously vary, so how can you tell if your cheesecake is done? You want to look for the amount of “jiggle” in the cake. Throw on some oven mitts and gently shake the pan. If everything looks pretty set and only a small circle in the center jiggles, then it’s ready.

Instructions
 

  • Preheat the oven to 325 degrees Fahrenheit and line the bottom of a 6 inch round cake pan with parchment paper.
  • Add all ingredients except the chocolate chips to a large mixing bowl and mix and whisk until well combined. Stir in the chocolate chips, then pour the batter into the lined cake pan
  • Bake in the preheated oven for 30 minutes.
  • Reduce the heat to 200 degrees Fahrenheit and continue baking for 50-60 minutes, until the cheesecake is mostly set in the center and golden brown on the edges.
  • Let cool for 30 minutes, then chill in the refrigerator until ready to serve.
